醸造方法：収穫を従来より少し遅らせ酸度を下げてから行います。「ダブルファーメンテーション（二重発酵）」という古来のリパッソ製法をマァジが復活させ、1964年に初めて醸造されたワインです。最初に全3種の土地固有種ブドウを一次発酵させ、そのワイン（70%）を、同じ全3種を約6週間半乾燥させた陰干しブドウ（30%）に注ぎ入れ18-20℃で15日間二次発酵を行います。すぐにマロラクティック発酵が行われ、この過程によって、ワインに新しい香りが生まれ、アルコールと色素、柔らかいタンニンが豊かになります。熟成は全体の2/3を90HLのスラヴォニアオーク樽で、残りの1/3を600Lのアリエとスラヴォニアオークの新樽で最低18ヶ月行います。瓶内熟成は最低3ヶ月。
