Gracias O Dios Old Tom Gin 700mL Hawkes Bay Syrah the Ministry of Agriculture awardedThis is a recipe inspired by the Old Tom Gin, using the Gracias a Dios agave spirit as a base which is macerated and distilled with 8 botanicals. It is then aged in oak barrels for 3 months, after the addition of Espadin juice (agave Espadin is the most commonly used agave in mezcal) which gives it a sweet touch.
